Mango Salsa



1 ripe mango, minced

1/2 red onion, minced

10 cherry tomatoes, minced

2 garlic cloves, crushed

1/4 cup fresh cilantro, minced

1/2 tsp cumin

1 tsp jalepeno, minced

2 tbsp olive oil

1/2 lime, squeezed

Salt and pepper to taste


Mix all ingredients together and let sit in the refrigerator for 20 min for all the flavors to marinate.

When ready, use this salsa to top your favorite fish dish or just eat straight up with crackers or chips.

Apple Butter



6 small to med apples peeled cored and chopped into 1/2 inch pieces

1/2 cup water or apple juice

2 tbsp cinnamon

1 tsp ground cloves

3 very ripe bananas

2 tbsp coconut oil

pinch of salt


Place all the ingredients in a bowl and mix together until the spices are well distributed. Spread the mixture evenly on a baking sheet and bake at 350 degrees Farenheight or until apples are nice and soft. In batches puree apple mixture in your nutribullet or blender and pour into a large pot on the stove. Bring the sauce to a simmer and allow to thicken for about 1 hour. Place in jars and refrigerate to enjoy. Makes about four cups of delicious apple butter.
